Time to move up!

Morgan has been practicing her gymnastics like crazy and she has improved so much. Her teachers told her that she needs to move to the next level this summer! I am so proud of her.

This is what Claire does when you tell her to do a donkey kick! (so cute)

Isn't that great!

Caleb always has to get in on the action too!

Claire

Today Claire had her 15 month well check. She is 16 months and 1 week old. She weighed 21.5lbs and is 31.5 inches long. Dr. Medford was very impressed that Claire could identify so many body parts. She can point to her forehead, eyes, nose, mouth, cheeks, chin, hair, fingers, and toes. My little genius can also match pitch. Claire also grabs her diaper and says boop when she has a poopy diaper. (is it time to potty train?) Dr. Medford said she is like a two year old. I tried to think of all the words she can say and here is what I came up with:
Hi
hi dee
Hello
dog
cat
kitty
fish
sister
mommy
mom
daddy
dad
mike
grandma
grandpa
poppy
noni
boop (poop)
peepee
wow
no
don't
bup (up)
down
pood (food)
meemee (milk)
duck
whats that (yes she can put 2 word together)
nose
eyes
ouch
nap
ball
tickle tickle
mine
my
thank you

bath
Jesus

shoe
boot
ouch

cheese
teachers

(there may be more but that's all I can think of right now) The thing about Claire is she will try to say anything you ask her to.

Her new favorite word is PRINCESS! and yes it sound just like princess, I would say a more accurate way to describe Claire is DIVA! Here are a few recent pics!

Caleb~December 4
Isaiah 12:4 NIV In that day you will say: “Give thanks to the LORD, call on his name; make known among the nations what he has done, and proclaim that his name is exalted.

Morgan ~May 24
John 5:24 NIV “I tell you the truth, whoever hears my word and believes him who sent me has eternal life and will not be condemned; he has crossed over from death to life.

Claire ~November 16
Acts 11:16 NIV Then I remembered what the Lord had said: 'John baptized with water, but you will be baptized with the Holy Spirit.'

life

There has not been too much to blog about lately so I thought I'd post a few pictures!

One cool thing I got to do was watch Morgan in her gymnastics class.

She is improving every week and it was fun to watch her in class.

Claire enjoyed it too!
This is a random picture that I think captures Claire's personality (or at least the good side of it) I love it!

This one is from a trip to home depot... we go there on Saturdays for fun!

Thats about it. Not to much going on we are just enjoying life!

Recipe of the week

Coffee-Braised Pot Roast with Caramelized Onions

1 (4-pound) beef chuck roast, trimmed of fat
1/2 teaspoon salt, or to taste
Freshly ground pepper to taste
4 teaspoons extra-virgin olive oil, divided
2 large onions, halved and thinly sliced (4 cups)
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 cup strong brewed coffee
2 tablespoons balsamic vinegar
2 tablespoons cornstarch mixed with 2 tablespoons water

Season beef with salt and pepper. Heat 2 teaspoons oil in a Dutch oven or soup pot over medium-high heat. Add beef and cook, turning from time to time, until well browned on all sides, 5 to 7 minutes. Transfer to a slow cooker.
Add the remaining 2 teaspoons oil to the pot. Add onions, reduce heat to medium and cook, stirring often, until softened and golden, 5 to 7 minutes. Add garlic and thyme; cook, stirring, for 1 minute. Stir in coffee and vinegar; bring to a simmer. Add the onion mixture to the slow cooker. Cover and cook until beef is tender, 4 1/2 to 5 hours on High or 7 to 8 hours on Low.
Transfer beef to a cutting board, tent with foil and let rest for about 10 minutes.
Skim fat from the remaining liquid; pour the liquid into a medium saucepan. Bring to a boil over medium-high heat. Add the cornstarch mixture and cook, whisking, until the gravy thickens slightly, about 1 minute. Season with pepper. Carve the beef and serve with gravy.
