A new Thing!

I decided that once a week I am going to post a recipe of some kind. I will try to post recipes on Monday.
This week I have a crock pot recipe!

Beef Barbecue
INGREDIENTS:
Beef Barbecue
3 lbs Boneless Chuck Roast1 cup BBQ Sauce (your fav. kind)1/2 cup apricot preserves1/3 cup green or sweet red pepper, chopped
1 small onion, Chopped
1 TBSP Dijon mustard
2 tsp brown sugar
Sandwich rolls
1) cut the roast into quarters; place in a graded 5 qt slow cooker. In a bowl, combine BBQ sauce, preserves, green pepper, onion, mustard, and brown sugar; pour over roast. Cover and cook on low for 6 to 8 hrs or until meat is tender.
2) Remove roast and thinly slice; return meat to slow cooker and stir gently. Cover and cook 20-30 minutes longer. Skim fat from sauce. Serve beef and the sauce on rolls.


Serve with: French fries, Tater Tots, Chips, Red Beans and Rice

Happy Birthday Zaylee Belle

Happy Birthday to my sweet niece Zaylee Belle! She is 4 today! My how quickly these years have gone by. I love you sweet girl! You are truly a joy to everyone you meet, with your great laugh! You are like sunshine! We love you so much.

How Claire is doing!

You may or may not know that Claire has not been "herself" for the last week. It started last Monday when I thought she had pink eye. She woke up that morning with her left eye matted shut so I assumed it was pink eye even though the white of the eye looked relatively normal. I immediately called the doctor and they said as long a she was on the antibiotic for 24 hrs she would NOT be contagious so I started treating her with vigamox. I went ahead and treated both eyes even though only the left was affected. After the second treatment the eyes were both goopy and getting worse. I treated her one more time and her eyes swelled shut...what do you know shes allergic to vigamox. I discontinued treatment and her eyes cleared up. She was fine the rest of the week then ran a low fever on Sunday it broke and didn't come back until Monday at 5:30 of course Dr. office was closed. I decided to give her medicine and to call in sick if she had a fever Tuesday but when she woke up she did not have fever. Her left eye was matted again so I cleaned it up and the white looked fine so off we went to school. When I got her home from school she had a low grade fever again so I took her to the Dr.

The reason she had a fever is that her right ear was infected, Poor Baby, she is now on medicine. They tested her for flu and RSV both NEGATIVE! The doctor said she does NOT have PINK EYE! Hmmm. I was right! Mommas intuition I guess. I am taking Claire to the Dr. Cernic today for a clogged tear duct, she may need surgery. This is why her left eye has been matting and goopy. Thanks to those of you who were truly concerned about Claire, I am more than happy to let people know what is going on, just ask me!

I don't know about you other moms out there but I am always conflicted about taking my kids to the Dr. especially with out a fever. I don't want to expose them to other things. I also feel like many colds will clear up on there own with out antibiotics. I want to protect little livers! I am not opposed to medications I just don't want to use them on a whim! I will always do what is best for my girls they are my world!

Chillin in my room!

For Christmas Morgan got a new Tinkerbell bedding set and the promise of newly painted walls. Well we finally got around to painting her room.

She chose pink and purple for her wall colors and it turned out really cute.

I also made this cute cork board for pictures and school work! Yippie for being crafty!

Morgan loves her new room! We also got cable for the first time ever. So here is a picture of Morgan chillin' in her new room watching a movie we recorded for her!
