I decided that once a week I am going to post a recipe of some kind. I will try to post recipes on Monday.
This week I have a crock pot recipe!
Beef Barbecue
INGREDIENTS:
Beef Barbecue
3 lbs Boneless Chuck Roast1 cup BBQ Sauce (your fav. kind)1/2 cup apricot preserves1/3 cup green or sweet red pepper, chopped
1 small onion, Chopped
1 TBSP Dijon mustard
2 tsp brown sugar
Sandwich rolls
1) cut the roast into quarters; place in a graded 5 qt slow cooker. In a bowl, combine BBQ sauce, preserves, green pepper, onion, mustard, and brown sugar; pour over roast. Cover and cook on low for 6 to 8 hrs or until meat is tender.
2) Remove roast and thinly slice; return meat to slow cooker and stir gently. Cover and cook 20-30 minutes longer. Skim fat from sauce. Serve beef and the sauce on rolls.
Serve with: French fries, Tater Tots, Chips, Red Beans and Rice
